It's been years since I've blogged....literally, years! Say, like at least 7!!! My last post was way back in 2012. Life has happened since then! I think that's why that Beatles' song about the long and winding road came to mind! There have been ups and downs and twists and turns along the way, but, through it all, GOD has remained ever faithful to me and watched over me through all of it!!!
In the past week or so, I've been thinking about coming back to blogging to share my creative endeavors in the culinary and crafting world. Thought, why not try it out again? Not to mention, I enjoy writing as well!
I was a dinner in April with friends and someone had made a suggestion about me doing a blog, particularly about the things I create in my kitchen. I post a lot on Facebook, including pictures of whatever it is I make. To be honest....I enjoy baking and cooking just for the joy of it. I enjoy taking the pictures, again, for the joy of it. I really enjoy sharing what I'm doing and when someone asks for the recipe or comments that they think it looks delicious, that's like a high compliment in my book!!!
As a result of others saying something and my thinking on it.... well, here I am!!! Not sure how many people will even see this, but it's yet another creative outlet for me and I like that idea!!!
I'm sharing with you what I made today - or technically, overnight!! I threw this in the crockpot before I left for work last night so that it would be all cooked up and ready to eat when I got home!!
London Broil Beef Roast with baby carrots and little red potatoes
A really easy and simple meal to fix. Into my Crockpot went a container of beef broth, the roast (which I took from the freezer frozen), a bunch of the baby carrots, about a pound or so of the baby red carrots (skins on, thank you very much!), several shakes of dried onion flakes (normally I use an onion, but didn't want my hands smelling like one all night at work!), and seasoned with some Weber Chicago Steak Seasoning on the roast.
That's it!!
I do have some ideas for the leftovers:
Veggie Beef Soup/Stew
BBQ Beef
Korean Beef
There are other options out there, I know. Those are just the ideas that are running around in my head when it comes to what I can do with the leftovers!!! I will let you know what I come up with!!
